“Julskinka” Traditional Swedish Christmas Ham

Julskinka, or Swedish Christmas Ham, is a traditional holiday dish in Sweden and is made with a breadcrumb and mustard crust. The ham serves as the centerpiece of the julbord, Sweden’s festive buffet. Enjoy it cold, room temperature, or warm from the oven. A classic way to enjoy julskinka is with a dollop of Swedish mustard (Lars Own® is available in two varieties) and knackerbröd (crispbread).

Ingredients

HAM

One 4.5-5 LB Lars Own® Swedish Cured Boneless Ham, Thawed

 

TOPPING

6 Tbsp Lars Own® Spicy Brown Mustard

2 egg yolks

1 Tbsp sugar

6 Tbsp fine dry breadcrumbs, divided

 

 

THAWING INSTRUCTIONS

3-Days Before Cooking: Remove ham from freezer keeping it in the vacuum bag. Place in refrigerator to thaw. OR

1-Day Before Cooking: Remove ham from freezer keeping it in the vacuum bag. Place in sink full of cold water for 4 hours. Return to refrigerator until ready to cook. If ham is needed sooner, leave it in cold water for approximately 30 minutes per pound or until completely thawed.

Steps

  1. Preheat oven to 325°F. Line a roasting pan with heavy-duty aluminum foil.
  2. Place ham, with netting on, in the center of the foil.
  3. Brush ham lightly with vegetable oil or apply cooking oil spray.
  4. Seal foil tightly around the ham.
  5. Place ham in oven and cook for 2 to 2-1/2 hours or until internal temperature reaches 145°F.
  6. Remove ham from oven and allow to rest 15 minutes.
  7. Carefully remove the netting using kitchen shears (we suggest using a carving board with spikes).
  8. Reset the oven to 450°F and place ham back into roasting pan.
  9. For topping, combine Lars Own® Spicy Brown Mustard, egg yolks, and sugar in a small bowl.
  10. Stir in 1 to 2 Tbsp of the breadcrumbs to thicken slightly so the topping spreads over the ham without running off.
  11. Brush mixture evenly over the top and sides of the ham; sprinkle with remaining breadcrumbs.
  12. Bake ham for 10 to 15 minutes, until breadcrumbs are light golden brown.
  13. Place ham on serving platter and garnish with kale, prunes, and an apple or orange.
  14. Serve warm, at room temperature, or cold.
