Baked Ham with Mustard & Ginger Snap Crust

This is a traditional holiday ham with a delicious twist. The crust adds deep mustard flavor and a sweet, spicy crunch to each slice.
Ingredients
1 6-9 lb Fully-Cooked, Lars Own® Swedish Cured Bone-In Ham,
Crust:
2 cups finely crushed Lars Own® Ginger Snaps (about 30 ginger snaps), divided
⅔ cup firmly packed light brown sugar
⅓ cup Lars Own® Swedish Style Spicy Brown Mustard
1 large egg
Steps
- Preheat oven to 275°F. Place the ham, cut side down, on a lightly greased roasting pan. Carefully trim rind, removing as much fat as possible. Insert a meat thermometer into the thickest part of the ham making sure it does not touch the bone.
- Place the roasting pan on the middle rack of the oven. When the ham reaches 135°F, remove from the oven. Turn the oven temperature up to 350°F.
- Combine 1½ cups of the crushed Lars’ Own Ginger Snaps, brown sugar, Lars' Own Spicy Brown Mustard and egg in a bowl; mix well to form a thick paste. With a small spatula, spread mixture evenly over the top and sides of ham, forming a ¼-inch-thick layer. Sprinkle with remaining ½ cup crushed ginger snaps, pressing evenly over ham and getting as much to adhere as possible.
- Bake ham in the 350°F oven for approximately 30 minutes or until crust has lightly browned and internal temperature has reached 145°F. Allow ham to stand 20 minutes before slicing. If desired, serve with Creamy Mustard Sauce.
Cook's tips
Lars Own® Swedish Style Sweet & Mild Mustard can be used in place of the Spicy Brown Mustard, if desired. Increase ginger snaps to 38 (about 2½ cups). Proceed as recipe directs.
