Baked Ham with Mustard & Ginger Snap Crust

This is a traditional holiday ham with a delicious twist. The crust adds deep mustard flavor and a sweet, spicy crunch to each slice.

Ingredients

1 6-9 lb Fully-Cooked, Lars Own® Swedish Cured Bone-In Ham,

 

Crust:

2 cups finely crushed Lars Own® Ginger Snaps (about 30 ginger snaps), divided

⅔ cup firmly packed light brown sugar

⅓ cup Lars Own® Swedish Style Spicy Brown Mustard

1 large egg

Steps

  1. Preheat oven to 275°F. Place the ham, cut side down, on a lightly greased roasting pan. Carefully trim rind, removing as much fat as possible. Insert a meat thermometer into the thickest part of the ham making sure it does not touch the bone.
  2. Place the roasting pan on the middle rack of the oven. When the ham reaches 135°F, remove from the oven. Turn the oven temperature up to 350°F.
  3. Combine 1½ cups of the crushed Lars’ Own Ginger Snaps, brown sugar, Lars' Own Spicy Brown Mustard and egg in a bowl; mix well to form a thick paste. With a small spatula, spread mixture evenly over the top and sides of ham, forming a ¼-inch-thick layer. Sprinkle with remaining ½ cup crushed ginger snaps, pressing evenly over ham and getting as much to adhere as possible.
  4. Bake ham in the 350°F oven for approximately 30 minutes or until crust has lightly browned and internal temperature has reached 145°F. Allow ham to stand 20 minutes before slicing. If desired, serve with Creamy Mustard Sauce.

Cook's tips

Lars Own® Swedish Style Sweet & Mild Mustard can be used in place of the Spicy Brown Mustard, if desired. Increase ginger snaps to 38 (about 2½ cups). Proceed as recipe directs.
