New Potato Salad with Mustard Dressing

Servings: 12 servings (½ cup per serving)

This potato salad is the perfect side dish, combining the flavor of mustard with colorful vegetables and fresh herbs in a creamy dressing.


3 pounds baby red new potatoes, well scrubbed

¼ cup mayonnaise

2 Tbsp Lars Own® Swedish Style Sweet & Mild Mustard

1 Tbsp apple cider vinegar

¼ cup olive oil

1 Tsp salt

¾ Tsp coarsely ground black pepper

½ cup finely diced red bell pepper

⅓ cup finely diced red onion

2 Tbsp finely chopped fresh dill

3 Tbsp finely chopped fresh parsley


  1. Place a steamer basket into a 8-quart stockpot. Place potatoes in steamer and cook, covered, over medium heat for 25-30 minutes or until a knife inserted in center of potatoes comes out easily. Allow potatoes to cool completely. Cut potatoes into ½-inch pieces; set aside.
  2. In a large mixing bowl, combine mayonnaise, Lars Own® Swedish Style Sweet & Mild Mustard and vinegar. Gradually whisk in olive oil in a thin stream. Add salt and pepper.
  3. Add cooled diced potatoes, bell pepper, onion, dill and parsley to dressing; toss gently to coat. Serve at room temperature or chilled.

Cook's tips

Lars Own® Swedish Style Spicy Brown Mustard can be used in place of the Sweet & Mild Mustard, if desired.
