Crispy Onion Chicken Cutlets

These tender chicken cutlets are coated with a crunchy, flavorful layer of Lars Own® Gluten Free Organic French Fried Onions. Serve with a cool, refreshing salad.
Ingredients
4 boneless, skinless chicken breast cutlets, 1/2-inch thick (3 to 4 oz each)
2 Tbsp Spicy Brown Mustard, such as Lars Own®
¼ cup gluten-free all-purpose flour
1 egg, lightly beaten
1 container (3.5 oz) Lars Own® Gluten Free Organic French Fried Onions, finely crushed (about 1 cup)
½ Tsp salt
½ Tsp ground black pepper
Steps
- Preheat oven to 375°F. Season chicken cutlets on both sides with salt and pepper. Brush with mustard and allow to marinate for 20 minutes at room temperature.
- Finely crush Lars Own French Fried Onions and place in a shallow bowl. Lightly coat cutlets in flour, patting off excess.
- Dip cutlets in beaten egg and then in crushed onions, coating evenly.
- Place a baking rack onto a baking sheet and spray with nonstick cooking spray. Arrange coated chicken cutlets on rack.
- Bake 14-16 minutes uncovered until coating is deep golden brown.
- Lightly cover with aluminum foil (to prevent overbrowning) and continue baking for 6 to 8 additional minutes until chicken is cooked through (165°F in center).
Cook's tips
- This recipe can be easily doubled.
- Lars Own® Crispy Onions can be used in place of French Fried Onions, if desired.
