Swedish Style Baked Rice Pudding

Servings: 12 (about ½ cup each)

Ingredients

5 cups chilled Lars Own® Swedish-Style Rice Porridge (prepared as directed on package)

1 cup whole milk

3 eggs, lightly beaten

⅔ cup raisins

Optional: ⅓ cup sugar, 1 tsp lemon zest and ½ cup chopped almonds

Lingonberries or other fruit preserves (optional)

Steps

  1. Preheat oven to 450ºF.
  2. Stir milk, eggs, raisins and optional ingredients, if desired, into chilled porridge.
  3. Pour into buttered casserole dish.
  4. Bake 30-35 minutes or until set and top is browned.
  5. Serve with lingonberries or other fruit preserves.
